Salmon is great for Omega-3 in this simple delicious dish

 

Ingredients

  • 2 Salmon fillets
  • Olive oil
  • Chopped basil leaves
  • 1 Avocado
  • Clove of garlic
  • Lemon juice
  • Single cream
  • Milk
  • Baby potatoes
  • Butter
  • Parsley
  1. Boil baby potatoes in a pan of hot water
  2. Half, deseed and peel the avocado
  3. Add the avocado, olive oil, basil, garlic, lemon juice, milk, single cream and some salt and pepper to a blender and blend until smooth and creamy
  4. Once the baby potatoes are cooked, drain them.
  5. Add parsley and a little butter to the pan. Melt the butter and stir the potatoes in the pan until most the butter has soaked the potatoes.
  6. In a griddle pan, add olive oil then sear the salmon until cooked through
  7. On a plate place the baby potatoes and salmon then pour over the avocado sauce, then add a little parsley to garnish
