Salmon is great for Omega-3 in this simple delicious dish
Ingredients
- 2 Salmon fillets
- Olive oil
- Chopped basil leaves
- 1 Avocado
- Clove of garlic
- Lemon juice
- Single cream
- Milk
- Baby potatoes
- Butter
- Parsley

- Boil baby potatoes in a pan of hot water
- Half, deseed and peel the avocado
- Add the avocado, olive oil, basil, garlic, lemon juice, milk, single cream and some salt and pepper to a blender and blend until smooth and creamy
- Once the baby potatoes are cooked, drain them.
- Add parsley and a little butter to the pan. Melt the butter and stir the potatoes in the pan until most the butter has soaked the potatoes.
- In a griddle pan, add olive oil then sear the salmon until cooked through
- On a plate place the baby potatoes and salmon then pour over the avocado sauce, then add a little parsley to garnish
